“The Story of Our Savory Danish”

Hello!

   I came about this savory danish by really just trying way too many ingredients. Overthinking taste, texture, and many mishaps along the way happened. I wish I could tell you everything turns out perfect on the first batch, but it doesn’t. I always want it to be perfection, but that’s not the journey. I love the process of baking, but it truly makes me crazy at times. 

Keeping things simple is something I struggle with. I can honestly say, I am so grateful to my husband for always being a wonderful sounding board, loving food, and not being a perfectionist, but having a great eye for details. When people say details matter. Boy! Isn’t that the truth!!!

We both had our recipe for the potato filling. I am much more competitive than he is. So yes… we bought many bags of potatoes, had days of baking different potato au gratin recipes; but, in the end his recipe was far more complex in taste, and simple to prepare. I could not imagine a more comforting and nostalgic taste profile to go into this savory danish. It really is an entire meal inside of a traditional croissant. 

This savory danish is a potato au gratin filling, with basil pesto, chives, and white cheddar cheese. Trust me when I say, we tried almost every meltable cheese possible! Goat, mozzarella, parmesan, brie, swiss, gruyère etc…That was not an issue since we LOVE cheese! Lots of charcuterie boards ended up being made in the process, but life is hard…what are you gonna do. Ha!

 We found that white cheddar was the best due to the taste profile and texture in the baking process. Keeping things sophisticated, with freshness, and quality was very important. Hands down white cheddar cheese is what tied the entire danish together. We literally have brainstorming sessions regarding each pastry, and I think it’s the mindfulness part of the process that comes through each morsel you taste. We are so proud of this recipe, how we stumbled through the process, and came out with one of the most delectable savory danishes. It’s the journey…“slow & steady wins the race ..."
